Fitat ve tanenler gibi antinutrientlerin, olumlu etkileri de bulunabiliyor. Ancak baz\u0131 besinlerde bulunan antinutrientler, baz\u0131 yollar ile azalt\u0131labilmekte ve etkileri en aza inebilmektedir. En \u00e7ok bilinen antinutrientler; fitat, tanenler, lektinler, proteaz inhibit\u00f6rleri ve kalsiyum oksalatlard\u0131r. Her grup farkl\u0131 besinlerde g\u00f6r\u00fclmektedir. Emilimi etkilenen mineraller aras\u0131nda demir, \u00e7inko, magnezyum ve kalsiyum da bulunmaktad\u0131r.<\/li>\n\n<li><strong>Tanenler:<\/strong>&nbsp;\u00c7e\u015fitli besinlerin sindirimini bozdu\u011fu belirtilen tanenler, genel olarak antioksidan polifenol s\u0131n\u0131f\u0131na giren besinlerde bulunuyor. Polifenol i\u00e7eren besinlere \u00f6rnek olarak; siyah zeytin, karanfil, bitter \u00e7ikolata, f\u0131nd\u0131k, enginar, badem, kuru erik, \u0131spanak, elma, brokoli, patates, ceviz ve seylan tar\u00e7\u0131n\u0131 gibi daha pek \u00e7ok besin verilebilir.<\/li>\n\n<li><strong>Lektinler:<\/strong>&nbsp;Baz\u0131 lektinler daha zararl\u0131 olabildi\u011fi gibi, yine besinlerin emilimini do\u011frudan etkileyebiliyor. \u00d6zellikle tohumlarda bulunan lektinler, t\u00fcm g\u0131da bitkilerinde, baklagillerde ve tah\u0131llarda yer almaktad\u0131r.<\/li>\n\n<li><strong>Proteaz \u0130nhibit\u00f6rleri:<\/strong>&nbsp;Yine tohumlar ba\u015fta olmak \u00fczere bitkiler aras\u0131nda, tah\u0131llarda, bakliyatlarda s\u0131k\u00e7a g\u00f6r\u00fclen proteaz inhibit\u00f6rleri, sindirim enzimlerini inhibe ederler ve protein sindirimini etkilerler.<\/li>\n\n<li><strong>Kalsiyum Oksalat:<\/strong>&nbsp;Oksalata ba\u011fl\u0131 bulunan kalsiyumun zay\u0131f emildi\u011fini belirtelim. Ispanak gibi bir\u00e7ok sebzede birincil kalsiyum formu oldu\u011funu da s\u00f6ylemeliyiz. Genel olarak besinlerin kabuklar\u0131nda bulunan antinutrientler, suda \u00e7\u00f6z\u00fcnebilme \u00f6zelli\u011fi ile bilinmektedir. Islat\u0131lan besinlerde fitat, lektinler, tanenler, kalsiyum oksalat\u0131 ve proteaz inhibit\u00f6rlerinin azald\u0131\u011f\u0131 g\u00f6zlemlenmi\u015ftir. Barbunya, soya fasulyesi, bakla gibi sebzelerde uygulanan \u0131slatma y\u00f6ntemi, proteaz inhibit\u00f6rlerini azaltmada olduk\u00e7a ba\u015far\u0131l\u0131 bir y\u00f6ntemdir.<\/li>\n\n<li><strong>Filizlenme Y\u00f6ntemi\u2026&nbsp;<\/strong>Birka\u00e7 s\u00fcren filizlenme y\u00f6ntemi, olduk\u00e7a basit bir \u015fekilde uygulanmaktad\u0131r. Do\u011fal bir s\u00fcre\u00e7 olan filizlenme y\u00f6ntemine \u00e7imlenme de denilmektedir. Antinutrient i\u00e7eren besinlerin pi\u015firme s\u00fcreleri, g\u0131da fabrikalar\u0131n\u0131n ve pi\u015firme y\u00f6ntemlere ba\u011fl\u0131 de\u011fi\u015fiklik g\u00f6sterebilmektedir.
