Sardalyalar memleketimizde gezici bal\u0131klardan say\u0131l\u0131rlar. Genellikle Ege ve Marmara&#8217;da bulunurlar. Denizlerin az so\u011fuk ve \u0131l\u0131man b\u00f6lgelerinde ya\u015fayan sardalyalar b\u00fcy\u00fck s\u00fcr\u00fcler halinde, ilkbaharda Ege&#8217;den Marmara&#8217;ya ge\u00e7erler. Marmara&#8217;da bulunanlar ise \u0130stanbul Bo\u011faz\u0131&#8217;n\u0131 ge\u00e7ip bo\u011faz\u0131n Karadeniz mahalline var\u0131rlar. Sonbaharda ise bu g\u00f6\u00e7 tersine olur.<br><br>Ege ve Marmara&#8217;da yerli olarak ya\u015fayan ve g\u00f6\u00e7 etmeyen sardalya s\u00fcr\u00fcleride bulunur. Bu bal\u0131klar yaz aylar\u0131nda k\u0131y\u0131lara yakla\u015f\u0131r, k\u0131\u015f\u0131n ise derin sulara \u00e7ekilirler.<br><br>Karadeniz&#8217;de az miktarda bulunan sardalyan\u0131n iri boylar\u0131na Akdeniz&#8217;de rastlan\u0131r. Bunlar ortalama 22cm olup &#8220;malta sardalyas\u0131&#8221; diye adland\u0131r\u0131l\u0131rlar. Ege ve Marmara&#8217;da ya\u015fayanlar\u0131n ise ortalama boylar\u0131 15cm&#8217;dir. Sardalya halk aras\u0131nda &#8220;ate\u015f bal\u0131\u011f\u0131&#8221; olarak da tan\u0131mlan\u0131r. Eskiden bu bal\u0131klar\u0131n denizde ate\u015f yak\u0131lmak suretiyle kabart\u0131lmas\u0131 ve a\u011flara vurdurularak yakalanmas\u0131ndan dolay\u0131 bu ismi alm\u0131\u015ft\u0131r.<br><br>Clupea aurita bilimsel ad\u0131yla tan\u0131mlanan t\u00fcr\u00fcne Ege&#8217;de &#8220;frissa&#8221; denmektedir. Sardalya bal\u0131klar\u0131 12-15 kula\u00e7larda, orta sularda b\u00fcy\u00fck s\u00fcr\u00fcler halinde ya\u015farlar. Zaman zaman dibe yak\u0131n inerler. Bazen de kolyoz s\u00fcr\u00fclerine kar\u0131\u015f\u0131rlar.<br><br>Yanlar\u0131ndan yass\u0131 ve f\u00fcze \u015feklinde olan sardalya bal\u0131\u011f\u0131n\u0131n a\u011fz\u0131 ufakt\u0131r. Di\u015fleri yoktur. Alt \u00e7enesi \u00fcst \u00e7enesine do\u011fru k\u0131vr\u0131kt\u0131r. Sardalyan\u0131n pullar\u0131 iri olup derisine iyice intibak etmemi\u015ftir. Bu y\u00fczden pullar\u0131 kolayl\u0131kla d\u00f6k\u00fcl\u00fcr. Bal\u0131\u011f\u0131n kafas\u0131 ve g\u00f6z\u00fc g\u00f6vdesine g\u00f6re orant\u0131l\u0131d\u0131r. S\u0131rt\u0131 ye\u015filimsi ve mavi renktedir. Yanlar\u0131 parlak g\u00fcm\u00fc\u015fi olup \u00fczerinde siyah benekler ta\u015f\u0131r. Karn\u0131 beyazd\u0131r.<br><br>Sardalyan\u0131n s\u0131rt y\u00fczgeci tek ve \u00fc\u00e7gen \u015feklindedir. Kuyruk y\u00fczgeci geli\u015fmi\u015f ve \u00e7atal bi\u00e7imini alm\u0131\u015ft\u0131r. Suda hareketini genellikle bu y\u00fczgecinin yard\u0131m\u0131yla sa\u011flar. Di\u011fer y\u00fczge\u00e7leri k\u00fc\u00e7\u00fckt\u00fcr ve g\u00f6vdesiyle orant\u0131l\u0131d\u0131r. An\u00fcs y\u00fczgeci d\u00fcz bir \u00e7izgi halinde kuyruk b\u00f6l\u00fcm\u00fcne do\u011fru uzan\u0131r. Bal\u0131\u011f\u0131n y\u00fczme kesesi vard\u0131r ve yanal \u00e7izgisi belirgin de\u011fildir. Sardalyada \u00e7a\u00e7a ve ringa gibi kendini b\u00fcy\u00fck bal\u0131klardan koruyamayan ve onlara yem olan bir bal\u0131kt\u0131r.<br><br>Bal\u0131k yavrular\u0131n\u0131 ve planktonlar\u0131 yiyerek ya\u015fam\u0131n\u0131 s\u00fcrd\u00fcr\u00fcr. D\u00f6rt-be\u015f y\u0131ll\u0131k bir ya\u015fam s\u00fcresi vard\u0131r. Sardalya, bal\u0131k av\u0131nda kullan\u0131lan ideal yemlerden biridir.<br><br>Canl\u0131 veya cans\u0131z, suda b\u0131rakt\u0131\u011f\u0131 koku sayesinde l\u00fcfer, palamut, torik, k\u00fc\u00e7\u00fck boy orkinos gibi bal\u0131klan kolayca oltaya \u00e7eker. Sinarit, akya, mercan, \u00e7ipura, tran\u00e7a, orfoz ve lahoz gibi ta\u015f bal\u0131klar\u0131 i\u00e7inde m\u00fckemmel bir yemdir.<br><br>Gece av\u0131nda genellikle yem olarak sardalya tak\u0131lm\u0131\u015f oltaya m\u0131\u011fr\u0131da atlar. Sularla ak\u0131\u015f yap\u0131l\u0131rken iki g\u00f6z\u00fcnden veya a\u015fa\u011f\u0131dan yukar\u0131 do\u011fru iki \u00e7enesinden ge\u00e7irilerek i\u011fneye tak\u0131l\u0131r.<br><br>Sardalya bal\u0131\u011f\u0131 bir ya\u015f\u0131ndan sonra nesil yeti\u015ftirir, ilkbahar sonlar\u0131nda orta sularda yumurta ve sperma d\u00f6kerler.<\/p><p><strong>Avc\u0131l\u0131\u011f\u0131<\/strong><\/p><p>D\u00fcnya bal\u0131k\u00e7\u0131l\u0131k ticaretinde \u00f6nemli bir yer alan sardalya bal\u0131klar\u0131 g\u0131rg\u0131r a\u011flar\u0131yla b\u00fcy\u00fck miktarda yakalan\u0131r. Taze, tuzlanm\u0131\u015f ve konserve halinde t\u00fcketimi \u00e7ok y\u00fcksektir. Sardalya denizlerimizde mevcut bal\u0131klar aras\u0131nda en lezzetlilerindendir. Izgaras\u0131, bu\u011fulamas\u0131, ka\u011f\u0131tta veya asma yapra\u011f\u0131nda kebab\u0131, tuzlamas\u0131 \u00e7ok nefis olur.<br><br>Sardalyan\u0131n olta ile de av\u0131 yap\u0131l\u0131r. 20-30 k\u00f6stekli \u00e7apariyle 12-15 kula\u00e7l\u0131k sularda gezinildi\u011finde s\u00fcr\u00fcye rastlan\u0131rsa bol miktarda yakalan\u0131r.<br><br>Hassas ve a\u011fz\u0131 \u00e7ok \u00e7abuk y\u0131rt\u0131lan bir bal\u0131k oldu\u011fu i\u00e7in \u00e7apariyi yumu\u015fak kullanmak, bal\u0131k atlad\u0131\u011f\u0131 anda \u00e7apariyi indirip kald\u0131rmay\u0131 b\u0131rakarak bal\u0131klar\u0131 yava\u015f\u00e7a yukar\u0131 almak gerekir. Sardalya \u00e7aparisi istavrit, kolyoz veya uskumru \u00e7aparisinden daha ince bir tak\u0131m olarak haz\u0131rlan\u0131r.<br><br>Olta b\u00f6l\u00fcm\u00fc 0.35mm, beden 0.30mm, 30-35 adet 12cm&#8217;lik k\u00f6stekler ise 0.25mm misinadan yap\u0131l\u0131r. Bu tak\u0131mda genellikle 150-200gr iskandil kullan\u0131l\u0131r. K\u00f6steklere 8-11 numara siyah \u00e7apraz i\u011fne, bunlar\u0131n ucuna da beyaz renkte tavu\u011fun kuyruk t\u00fcy\u00fc ba\u011flan\u0131r.
